On Jan. 15, the area welcomed Montevalle Health & Wellness Resort, a luxury, all-inclusive, adults-only destination focusing on detox, holistic therapies, and innovative treatments. Sitting on 10 hectares of Mediterranean-like landscapes with olive trees, lavender plants, and vineyards, the serene property features 14 one-bedroom villas (with six more in the works) and a heated pool with a Jacuzzi, along with a number of wellness facilities such as a reflexology path, a meditation labyrinth, a spa, and a tennis court. The resort’s surroundings inspired the earthy color palette, and many indigenous plants were incorporated into the décor and landscape to create a stronger sense of place. But the focus of Montevalle, which is dreamt up by owner and natural wellness practitioner Dr. Carlos Bautista, is its cutting-edge program blending state-of-the-art treatments with a holistic approach to health. Naturally, food is a major element of the resort’s wellness offerings. Bautista tapped culinary veteran chef Raul Nuñez to create the restaurant’s menu (including snacks) that changes daily based on seasonal ingredients.
